As a traditional local snack in Qingyan Ancient Town, Qingyan Tofu is prepared by roasting tofu on the fire until both sides are yellow, tearing it apart, and dipping the pieces in a sauce made of chopped green onions, salt, vinegar, and paste pepper. It is then served with spiced chili. Its taste must meet the test of "salty, spicy, and hot." Salty represents enough salt, spicy means the use of spicy and fragrant peppers, and hot refers to the experience of eating it just after roasting.
